It is based in the principle of refraction: Light waves change of direction when they change from one medium to another. The <strong>refractometry <\/strong>index, measured in degree brix, <strong>correlates<\/strong> <strong>with<\/strong> the <strong>osmolality<\/strong>.<\/p>\n<p>The refractometer is a very inexpensive device, and it is quick and easy to use. When buying a new one make sure that:<\/p>\n<ul>\n<li>It is a refractometer with <strong>Automatic Temperature Compensation (ATC)<\/strong>, since refraction index can vary with the temperature.<\/li>\n<li><strong>The scale it uses:<\/strong> Magapor recommends a scale <strong>0-10\u00b0Brix<\/strong> to make a more precise measure.
